Learn how to make amazing Ahmedabad’s Vadapav AHMEDABADI VADA PAV CHEF AANAL KOTAK PREP TIME: 5-10 mins COOKING TIME: 10-15 mins INGREDIENTS: FOR BATTER: • 3 cup besan • Salt as per taste • Pinch ajwain • Pinch baking soda • Water as required • Oil for frying FOR RED GARLIC CHUTNEY: • 2 tbsp oil • 2 tbsp garlic • 2 tbsp peanuts • ½ cup desiccated coconut • Salt as per taste • 1 tbsp red chilli powder • 1 tbsp coriander powder • 1 tbsp cumin powder FOR ALOO MIXTURE: • 3 tbsp oil • 1 tsp mustard seeds • Pinch asafoetida • 2 tbsp green chilli (chopped) • 4-5 curry leaves • 1 tbsp garlic • 3 nos. potatoes (boiled & mashed) • Salt as per taste • 1 tsp turmeric powder • 1 tsp coriander powder FOR ASSEMBLING: • 2 tbsp butter • Prepared dry red garlic chutney • Vada • Bun METHOD: FOR BATTER: • In a bowl add besan, salt as per taste, ajwain, and baking soda. Mix it then add gradually add water and prepare a semi-thick batter. • Rest this batter for 30 minutes • Keep this batter aside for further use. FOR RED GARLIC CHUTNEY: • In a pan add oil, garlic, peanuts, desiccated coconut, salt as per taste, red chilli powder, coriander powder, cumin powder. • Roast this on slow flame for 4-5 minutes. • Then grind it, keep the red garlic chutney aside. FOR ALOO MIXTURE: • In a pan add oil, mustard seeds, hing, green chilli, curry leaves, garlic, sauté this well. • Then add the potatoes, salt as per taste, turmeric powder, coriander powder. • Mix well, keep the aloo mixture aside. • Now take a spoonful of mixture bake vada from it and drop it in the batter. Fry vada in oil on medium flame. FOR ASSEMBLING: • On a tava, add butter, dry red garlic chutney, place the bun and roast it properly. • Then place the vada, add roast the vada pav once again. • AHEMDABADI VADA PAV is ready.
