They are also open to unique flavors and textures and have been exposed to a diversity of foods at a young age. For innovation within the food industry, it’s no longer just about offering vegan patties. Today’s consumer also demonstrates purposeful or enlightened eating behavior that is concerned with where their food comes from, what’s in it, and seeks labels such as those promoting plant-based, ancient grains, whole grains, and more. This brings new opportunities to increase whole grains in the diet like never before.
