| Video Discription | The California Burrito. Originating in San Diego, California in the 1980’s, this monster of a flour tortilla burrito is filled with carne asada (marinated grilled beef, typically skirt steak), French fries, cheddar cheese, pico de gallo and an assortment of other yummy toppings. So come along with me and let’s make this easy to make delicious burrito. We are also gonna sere up some Carne Asada fries. A basket full of fries with our marinated beef mixed in with lots of cheddar cheese. Enjoy !!! SHOPPING LIST: 1 lb. of skirt steak (flank steak will work also) Just a word about skirt steak. Skirt steak is a thin, long cut of beef from the diaphragm muscles of the cow. It is also lean and contains a lot of tough fibers. It has even more intense beefy flavor than flank steak. It does contain more tough muscles than flank steak, though, so should only be cooked to rare or medium rare for the most tender texture. It should also be cut against the grain when served. It takes to marinades even better than flank steaks and are best cooked quickly over high heat, although it can also be slow-cooked and braised. Skirt steak is best seared or grilled and makes a great stir-fry meat. It is the classic cut used in fajitas. Marinade ingredients: Juice of 1 orange Juice of 1 lime Juice of 1 lemon 1/2 cup of olive oil 2 cloves of garlic Pico De Gallo Recipe: https://www.youtube.com/watch?v=ANr2a_uDDaQ Carne Asada French Fries Ingredients: Handful of store bought fast food fries or you can cut your own… More fries for the Carne Asada basket 1 large russet potato, peeled and sliced into thin French fries Frying oil Shredded cheddar cheese Marinaded Carne Asada beef Pico de Gallo Guacamole Sour cream Additional Ingredients: Kosher Salt Pepper 1 cup of cheddar cheese, shredded 2, 12" flour tortillas Instructions: First, make the pico de gallo and place in the fridge for at least 3 hours. The link on how to make it is listed above. Next, make the marinade. Just add those ingredients (listed above) into a bowl and mix to combine. Set aside. Then we want to marinate the skirt steak. You can also use flank steak or chuck steak. Place the steak on a cutting board and take a sharp butcher knife and make a number of scores across the entire length of the steak on both sides. Then with a meat tenderizer, make a number of strikes on both sides also. This will help the beef absorb the marinade and tenderize it. Place the steak in a baking dish and pour the marinade over the steak making certain the all of the steak is covered with the marinade. Place a cover over the dish and place in the fridge for at least 2 hours up to 6 hours. I wouldn’t marinade for longer because the meat will tend to turn to mush because of the type of ingredients used in the marinade. After marinating the steak let it set out of on the counter to come to room temperature before grilling it up. About 45 minutes. Right before grilling the beef fry or bake the French fries and set aside. When your beef has come to room temp heat your grill to high heat, and season the beef with Kosher salt and fresh ground black pepper. Grill the beef for about 2 minutes per side for medium rare. Increase the cooking times depending on how you like it cooked. When done, let the steak rest for about 5 to 10 minutes. Don’t start slicing the beef immediately off of the grill or you’ll lose a lot of juices and the beef will be tough. After resting, slice the beef against the grain into thin slices and/or chop into smaller bite-size pieces. Next, warm the tortilla on the grill or microwave just long enough to warm it. Add the beef to the tortilla and top with the pico de gallo, French fries and cheddar cheese. You can add sour cream, guacamole, and anything else you want in your burrito. This is a rather large burrito so cut it up any way you like. We ain’t done yet….. Load a serving basket up with fries and mix in some of the Carne Asada and top with cheddar cheese and pico de gallo for a delicious side with your burrito. Enjoy guys !!!
