| Video Discription | Raitas are favorite side dish in India to enhance any meals taste. This raita is made by tempering shredded carrots and then mixing it with curd. It is great to have as a side dish with parathas, pulao, biryani or with roti sabji. Other Names: Gajar raita, Simple Carrot Raita Ingredients: 1 cup Carrots (peeled and shredded) 2 cups Curd (aka Yogurt) ¼ cup Green Coriander (chopped) 1 tbsp Cooking Oil 1 tbsp Green Chillies (finely chopped) 1 Whole Red Chillies 1 tsp Mustard Seeds Black Salt (according to taste) 1 tsp Chat Masala Instructions: 1. First of all thoroughly wash carrots to remove any dirt and then peel all of them. Now shred all carrots from this side as we want slightly thicker shreds. 2. Now lets cook carrot with some tempering which gives nice taste to raita. 3. For this take a pan and add 1 tbsp oil on high heat. When oil is hot, put heat to low and add a whole red chilli after breaking like this. Stir it a little to fry it slightly, then add mustard seeds and let them crackle. After 20-30 seconds, When they stop crackling take out around ½ tsp mustard seeds and a piece of chilli from tadka, we will use it later to garnish raita. Now add shredded carrot to tadka and saute it for 3-4 mins on low heat. After 4 mins, cover the pan and switch off the heat and let it sit for 5 mins. We are cooking carrots like this to make them soft without getting mushy. After 5 mins remove the pan cover and let carrots cool down for 10-15 mins because if you add hot carrot in curd, it can curdle it. 4. Now take some curd in a bowl and blend it using a hand mixer to make it smooth. If you want you can also use a blender or a whisker. Once curd is blended well, add black salt, if black salt is not available just use normal salt, then add chaat masala, chopped green chillies and chopped green coriander. Now mix all ingredients well. At last add carrots we cooked earlier and again mix it well. Add water if you feel raita is little thick, I have used ¼ cup of water. Our raita is ready now so take it out in a serving bowl but to make it even more appealing garnish it with tempering we made earlier, some green coriander and some carrot shreds. 5. Our raita is ready to taste and its looking beautiful after garnishing. Tips n Tricks: 1. You can use simple salt if black salt is not available. 2. Instead of chaat masala you can also use raita masala (available in Indian grocery stores).
