It typically takes 70 to 80 days for carrots to be ready for harvesting after planting. 1 medium carrot provides about 25 calories, less than a gram of fat, 5.8 grams of carbohydrates, and 0.6 grams of protein and 1.7 grams of fiber. Carrots have a great micronutrient profile, as they are high in vitamin A, vitamin C, vitamin K, folate, potassium, vitamin B6, and manganese. Carrots also contain antioxidants that help to protect cells from harmful free radicals and are linked to a decreased risk of many diseases, such as heart disease and high blood pressure. And carrots are also high in fiber, which can help improve gut health, bowel health, lower cholesterol levels, aid in weight control and in removing toxins from the body. Carrots are also rather inexpensive at about $1 per pound or for 16 ounces, which equates to about 13 cents for a medium sized carrot. And carrots can be eaten raw as a healthy snack, added to many salads, as a side to a main entrée, as part of a vegetable platter or even added to a smoothie.
