It's a huge favorite for locals on their morning walks when they visit a tiny shack on Dona Paula as a tasty after walk treat. Ingredients: 3 Tablespoons Coconut Oil 1 Cup of Dried White Peas (Channa) 2 Red Potatoes 2 Teaspoons Coriander Seeds 1 Teaspoon Cumin 10 Pieces of Black Pepper 4 Pieces of Cloves 5 Red Chilli Peppers 1 Inch Piece of Cinnamon 1 Cup of Shredded Coconut 1 Stem of Curry Leaves 1 Teaspoon Turmeric 1/2 Cup Cilantro Salt to taste Method: Pre Work Soak white peas overnight Cook in cooker/Instant Pot with 2 diced potatoes 1. Create Masala Melt 1 TB of coconut oil Add red chillis, coriander, cumin, black pepper, cloves, cinnamon Saute till it browns a little Add onion and brown and then add shredded coconut * this will be the fried masala mix 2. Create Masala Paste In the mixer/grinder add fried masala mix, tamarind, turmeric and 1 cup of water Grind till it is a smooth paste 3. Fried Onions Melt 1 TB of coconut oil Add onion till it browns a bit 4. Final Channa Dish Add fried onions to channa and potatoes Add fried masala mix Add cilantro and salt Enjoy this special dish with family and friends! |
