Friends,
Today we have come up with recipe of CHAPDI TAVO (UNDHIYU) which is very popular dish of Rajkot City. This dish is most preferred by Rajkotiians during winter. This is spicy dish which is served hot and usually sweet like Gulab Jamun is preferred along with.
We have tried to make this video with due care such that, it become a wonderful experience to watch. we request to watch this video till end.

Preparation of Tavo (Undhiyu):
Ingredients:
½ bitter gourd – lauki
1 medium size brinjal - Bengan
1 medium size sweet potato
150 grams Cabbage
150 grams Cauliflower – Fulgobi
1 medium size Potato
50 grams Guvar
50 Grams Green Choli
50 grams Tindora
2 Tomatoes
100 grams Green Tuver
100 Grams green Matar - Vatana
1 big size onion - Pyaj
1 Lemon
Spices:
2 TS coriander-cumin seeds powder
1 TS turmeric powder
4 TS Red Chilli powder – Lal Mirch Powder
1 TS Kasuri Methi
1 TS Mustard seeds,
1 TS Cumin seeds,
2 Tamal Patra,
2 dry red chillies
5/6 cloves, cinnamon,
Sweet curry leaves and
Asafoetida
1 TS Garam Masala for sabji

Peel off these veggies and cut them into small pieces. Souk them in water.
Add cut veggies, salt, turmeric powder and water in pressure cooker. Pressure cook for 5/6 whistles.

Souk in water for 5/6 hours:
100 grams mung, dry choli, math each
Add beans, salt & turmeric and little water in pressure cooker.
Pressure cook these beans for 5/6 whistles.

Make paste in mixer:
1 small piece ginger – Adrak
3 green chillies – Hari Mirch
5 garlic cloves - Lehsun

Making Tavo:
Take 2/3 bowl of oil in a pan. Heat oil. Add Mustard seeds, Cumin seeds, Tamal Patra, dry red chillies, 5/6 cloves, cinnamon, sweet curry leaves and asafoetida.
Add ginger-garlic-chilli paste, cook till it turns golden brown
Add grated onion, and cook till it turns light brown.
Add cut tomatoes,
Add turmeric powder, 3 TS red chilli powder, 1 TS garam masala, Kasuri methi,
Add pressure cooked vegitables, beans, green tuvar and green matar Mesh them and stir well
Add salt and kasuri methi if required. Add lemon juice. Mesh tavo well.
Tavo (Undhiyu) is ready.
For making CHAPDI, take 100 grams coarse wheat flour, add 1 TS besan flour, add 1 TS til, salt and a cup of oil. Make ata using hands. Make chapdi using hands. Fry chapdi at low flame. Chapdi is ready.
Serve Chapdi Tavo (Undhiyu) with fried green chilli, red lahsun chutney and cut green onion.
