| Video Discription | ✓ Whilst in Bardoli (in Gujarat, India) we came across this wonderfully named stall. They specialise in serving up a Kutchi Street Food favourite which is Dabeli. The Gujarati state of Kutch as we know is famous for it's Kutchi Dabeli and originates from there. Firstly a Pav (burger bun) is split open and then spread with: * Sweet and Sour Chutney Amli (Date, Jaggery and Tararind) sauce. * Hot, Orange Garlic paste. * * Then the main filling is added which is a spicy potato mash (aka Sanjho). * To add extra flavour, crunch and bite, Chopped Red Onion and deliciously Crunchy Spiced Masala Peanuts are added. * To add even more crunch; Sev (Gram Flour Noodles) and Pomegranate Seeds are also added. * To add additional sweetness and colour Tutti Frutti dried fruits and finely grated Coconut is used as a garnish. It can be made on the Tawa with either Oil or Butter. The filled bun is heated on the hot griddled and once heated up it's then served up. At 4:26 you can watch some very fast onion cutting action. This is a "pure vegetarian" lari serving up what we feel is delicious restaurant quality fast food; but at affordable street food prices!!! We learn from the owner that he learned the recipe from his guru at a very young age and has been serving up the dabeli for 28 years now and we can confirm that the dabeli that we ate here was absolutely delicious. Dilkush Dabeli shop is located in a street affectionately known as "Khaudar Galli" (Food Eating Street). It's the Galli (Street) opposite Jalaram Mandir (Temple), just off Station Road, Bardoli Town, Gujarat, India. Dabeli is said to have been originally invented by Shri Mohanbhai Bavaji. There appears to be some mistake on wiki (Wikipedia) which states that Mr Keshavji Gabha Chudasama was the inventor of dabeli in fact Keshvji was not the inventor, he was in fact also a student of Shree Mohanbhai just like Mr Vinod Mamtora. Even dabeli masala made in the city are said to be most authentic. The dabeli masala dry-paste mash potato spice recipe ingredients typically contain: dried red-chillies, black-pepper powder, dried coconut, salt, clove, cinnamon, coriander, cumin, turmeric, elachi, Star Anise (badiyan), black-salt, Bay Leaf (tej-patta) & other garam masalas. Another name for Kutchi Dabeli is Kutchi burger. |
