Follow along the recipe development and testing process for making a an easy but rich and delicious chilled cucumber and buttermilk soup. [Recipe Below] Chilled Cucumber & Buttermilk Soup Serves 4 1 large Cucumber, ca. 530 grams, washed and peeled 4 stalks Celery, ca. 250 grams, washed and trimmed 1 Shallot, peeled 1 Cup Buttermilk (ca. 240 grams) ½ Cup Sour Cream (ca. 120 grams) 1 tsp. Salt ½ tsp. Pepper 2 Tbsp. chopped Dill, ca. 3 grams, half reserved for garnish ¼ tsp. Anchovy ¼ Cup Olive Oil (30 grams) ½ Tbsp. Lemon juice Place the celery, cucumber, shallot, buttermilk, sour cream, salt, pepper, anchovy, olive oil, and lemon juice into a blender with 1 tablespoon of dill. Blend until smooth, then strain the soup through a fine mesh sieve into another bowl. Use a scraping spatula to press on the solids and extract as much of the liquid as possible. Taste and adjust salt and pepper to taste. Chill for at least 2 hours before serving. Soup can be made up to 24 hours ahead of time. Before serving, taste and adjust the salt and pepper once more. Garnish with reserved dill and some olive oil. Serve as an elegant first course, or as a light vegetarian meal paired with salad and bread. *Enjoyed the video?
