You just need to focus on your internal temperature and remember that a smoked prime rib will have around a 7 to 10 degree carry over after you take it off the pellet grill. So just pull it early and let it rest for a good 30 minutes so it climbs up to your desired temperature! A pellet grill is a fantastic option to do a smoked prime rib because you just set that temp at 225° so you can focus more on the meat temp and not have to tend to a fire!
