| Video Discription | Follow Noah on Instagram: https://www.instagram.com/galuten But the Don't Panic Pantry Cookbook: https://www.amazon.com/Dont-Panic-Pantry-Cookbook-Vegetarian/dp/0593319834 Spring Pasta Fazool a big glug of olive oil, plus more to finish 1 head green garlic (or 4 garlic cloves) chopped 8 small or 4 large yellow zucchini, small-diced or grated 1 bunch basil stems salt a pinch of crushed red pepper 1 3/4 cups cooked white beans with their cooking liquid (or 1 can) 3 pints sungold (or cherry tomatoes), blended 1 pound soup pasta, like cavatelli or orechiette parmesan to finish basil leaves to finish In a wide pan or dutch oven, heat the olive oil over medium high heat. Add the garlic, and once it is just starting to brown, add the zucchini and allow it to sautée, stirring occasionally. Add a pinch of salt, crushed red pepper, and basil stems. Allow to sautée for about 5 minutes, then cover it and reduce the heat to medium-low and let it cook for about 10 more minutes, just until softened. Bring a pot of salted water to a boil. Remove the lid and add the beans, then increase the heat to medium high. Cook until the zuchinni is quite soft. Remove the basil stems and then add the tomatoes. Bring to a simmer and then turn off the heat and season to taste with salt. Cook the pasta until quite al dente, and then strain it and add it to the pot. Return it to a simmer, then turn off the heat. Taste for salt and adjust as needed. Serve immediately, with basil leaves, parmesan cheese and a drizzle of olive oil. |
