Ful Mudammas (sometimes spelled “fool”) is a savory dip made from fava beans, with garlic, seven spice and tomatoes. Ful has a long history - it has been a staple since Biblical times in Egypt and the entire MENA region as a source of protein, and is packed with fiber, iron, magnesium and many other vitamins and minerals. Here is a Palestinian version based on my family's recipe! Fava beans have a distinctive taste that is nutty and savory, with that addictive umami quality that keeps you coming back for more. I have made this for so many parties and brunches. It is one of the most special things to wake up to and share with others.
