| Video Discription | Braised beef: cooked at low temperature for a high level of flavor! 😋 👇RECIPE👇 @khalidelmahi INGREDIENTS: - For the beef: 1.5 kg beef chuck 4 carrots 3 spring onions 3 celery stalks 20 g tomato paste 4 garlic cloves Rosemary and sage as needed 1 l demi-glace Salt, pepper, cinnamon, star anise as needed - For the mashed potatoes: 1 kg boiled potatoes 50 g peanut butter 50 g butter 20 g grated Parmesan cheese 100 ml hot cream Salt as needed 1 teaspoon chives METHOD: Season the beef with demi-glace and sear all the edges in a pan. Prepare the base: cut carrots, spring onions, and celery and cook with garlic and mixed herbs (I used rosemary and sage). Add tomato concentrate, 1 liter of demi-glace, cinnamon, star anise, salt, and pepper. Cook for 3 hours over low heat. Meanwhile, prepare mashed potatoes: mash the potatoes and mix with all the ingredients. Strain the base, reduce it, dress the beef, and plate it. |
