| Video Discription | Link “Swamiji’s Kitchen “ Channel https://www.youtube.com/c/SwamijisKitchen No. 64…Very Tasty Paatraa… Arbi… Ingredients … 2 bunches of paatraa (arbi) 2 cups besan 1 1/2 tbs rice flour Pinch turmeric powder 1 tsp red chilli powder Salt 4 tbs tamarind paste 6 tbs of jaggery water Peanuts Oil 1 tsp mustard seeds 1 tbs sesame seeds Grated coconut Method… Take 2 bunches of Arbi (paatraa) leaves 5 leaves each. Large to small in grade.Cut the veins of the paatraa leaves (arbi). Wash well. Make a paste of 2 cups of besan (gram flour), 1 and a half tablespoons of rice flour, pinch of turmeric powder, 1 teaspoon of red chilli powder, salt, tamarind paste 3 to 4 tablespoons (according to how sour you want), 5 to 6 tablespoons of soaked jaggery water, crushed peanuts. Mix well, then add some water to make a thick batter. Apply this batter thinly on the largest leaf first and go on putting one one leaf on top and apply the batter on it till you apply on the smallest 5th leaf. Roll all leaves together in a rod. Heat water in a steamer and steam cook this roll for 15 minutes. When done cut them into round pieces and sauté with oil, mustard seeds and white sesame seeds (til). Garnish with coriander leaves and grated coconut. Serve with green chutney.
