| Video Discription | Instant sooji handvo is a healthy dish and a complete meal in itself. You can cook this for breakfast, lunch or dinner or as an evening snack. Let's start making Handvo. RECIPE: Take a large bowl. Add in 1 cup of rava/ sooji/ semolina, 1 cup of chickpea flour/ besan, 1 cup of curd or yoghurt or yogurt. Mix nicely ensuring that there are no lumps. Add 1/4 tsp of turmeric or haldi powder, 1 tsp coriander or dhania powder, 1 tsp red chilly or laal mirchi powder, 1/2 tsp of cumin seeds/ jeera, and some sesame seeds or til. Mix everything well. If the batter is thick, add very little water.Add 1/2 cup of capsicum/ bell peppers or shimla mirchi, 1 cup grated carrotor gajar or gaajar, Salt/ namak as per your taste, 1 cup of any green leafy vegetable to make it more healthier, 1 green chilly/ hari mirchi - fine chopped, a few coriander leaves/ dhania , a few roasted peanuts/ groundnuts, moongphali or mungphali or moongfali or mungfali/ singhdaane or singhdane for that amazing crunch and bite. Mix well. Add very little water to adjust the consistency of the batter. Batter should be of this consistency. Let the batter rest for 15 - 20 mins. After 15 minutes. Add 2 tsp of lemon/ lime juice or nimbu/ neembu ka ras . Incase, you had used sour curds in the beginning, skip the lime. Add 1/2 tsp of baking soda. Mix well and notice the rise in batter. In a heavy bottomed pan, heat 3 tbsp of oil or tel. Add 1/4 tsp of mustard seeds or rai or sarson. let them splutter well. add 1/4 tsp of cumin seeds or jeera. some sesame seeds/ til. Add handvo batter into the pan. Spread a little. Cover and cook for 12 - 15 mins on low heat. You can adjust the timing based on the thickness of your pan. After around 12 mins of cooking. Notice the brown crust on the edges. Flip and remove onto a plate. In the same pan, heat 1 tbsp of oil. Add mustard and cumin seeds, followed by some sesame seeds, curry leaves/ kadi patte and coriander leaves/ dhania. Replace the handvo into the pan keeping the uncooked side below. cover and cook for around 8 - 10 mins on low heat or until done. After around 8 mins. Flip and check the handvo. Nice and well cooked handvo is ready. Serve it hot.
