Mushroom Chicken Casserole: 24 oz skinless, boneless chicken thighs, cut into bite sized pieces ½ cup chicken broth 8 oz sliced mushrooms ½ red onion, sliced 2 tablespoons olive oil 1 teaspoon salt ½ teaspoon black pepper ½ teaspoon dried thyme 8 oz cream cheese, cubed 1 whole garlic bulb 8 oz Kaizen Ziti Pasta 5 oz baby spinach leaves Preheat oven to 400 degrees F. In a large casserole dish, toss together diced chicken, chicken broth, mushrooms, red onion, olive oil, salt, pepper and thyme. Scatter cubed cream cheese around the dish. Cut the top of the garlic to expose the cloves. Nestle the garlic bulb into the center of the casserole dish. Drizzle olive oil on top of the garlic bulb. Cover dish with aluminum foil. Bake at 400 degrees F for 35-40 minutes or until chicken is cooked through and garlic is softened. Meanwhile, cook pasta according to package instructions. This pasta tends to crumble and break if overcooked. So only cook for 5-6 minutes (per instructions). Drain pasta, rinse with cold water and set aside. After baking, remove garlic bulb. Stir in spinach leaves right away to allow for hot casserole to wilt the spinach. If casserole looks dry, stir in some hot chicken broth until smooth. Once cool enough to handle, squeeze the roasted garlic cloves into a bowl and mash. Stir the roasted garlic and pasta into the casserole. Season with more salt and pepper if necessary.
