| Video Discription | Moringa is the most nutritious plant on earth. We use the immature pods a.k.a. Drumsticks in this recipe. Its starchy flesh includes protein, vitamins, and minerals. Tips to choose good drumsticks are in the video :) This recipe involves simple ingredients, and it’s pretty easy to put them together. FOR THE DAL (LENTILS) 2 CUPS TOOR (ARHAR) DAL 10 CUPS/80 OZ WATER 2 TEASPOONS SALT 1 TEASPOON TURMERIC POWDER (HALDI) 5 DRUMSTICKS (MORINGA’s immature pods) -Not chicken. It’s a plant! FOR THE DRY TADKA (tempering/frying) Keep ready in a bowl the following ingredients:- 1 TEASPOON FENUGREEK SEEDS (METHI SEEDS) 2 TEASPOONS MUSTARD SEEDS (RAI) 1 TEASPOON WHOLE CORIANDER SEEDS (DHANIA) ½ TEASPOON ASAFOETIDA POWDER (HING) 4 WHOLE DRIED RED CHILLIES FRESH AND WET INGREDIENTS FOR TADKA ½ CUP PEANUT OIL 2 ONIONS 6 FRESH CURRY LEAVES 2 CARROTS (1 ½ cups, chopped) ½ HEAD CAULIFLOWER (GOBI FLORETS) 2 BABY EGGPLANTS or 1 MEDIUM EGGPLANT 2 LARGE TOMATOES or 3-4 MEDIUM TOMATOES 1 PACKET MTR SAMBAR PASTE (there are multiple Sambar mixes but the paste one is the best) 1 BUNCH FRESH CORIANDER (DHANIA) METHOD: Pressure cook the dal mix - whistle for 3 minutes. Let the pressure release on its own for at least 30 min. Heat oil in a big pan When hot, put the dry Tadka list. As soon as the seeds sputter, add onions, carrots, eggplant, cauliflower, curry leaves and sauté for about 5 minutes. Add the entire packet of sambar paste and stir for 1 minute Add chopped tomatoes and cook for about 4 minutes on low heat. Add cooked dal to the tomato pot Cook for 10 min in low heat When you are ready to eat, add hot water to SAMBAR Garnish with chopped coriander just before eating |
