I love flattened rice or poha/ aval as we call for it's quick cooking quality. There are various options in poha/ aval varieties. Like thin, thick, medium thick and red rice aval too. You can adapt this recipe for all just watch out for cooking time. Thin poha may get cook just as you mix. I recommend atleast thick or medium thick as tomato needs to be absorbed and not turn mushy. Make sure to balance the tart of tomatoes with chilli factor and salt seasoning perfectly.
