| Video Discription | Ingredients: Carrot Raw plantain Cluster Beans Beans Drumsticks Yam Curry leaves Green chillies Turmeric powder Water Salt Grated Coconut - ½ coconut Cumin seeds - 1tsp Coconut oil Sour curd Steps: Cut the vegetables lengthwise. Add them to a kadai along with green chillies, turmeric powder, salt and curry leaves. Mix well. Add water (I used 1 glass water). Cover and bring it to a boil on medium flame. Once it boils, cook on low flame till they are 75% done. Then cook on high flame till the excess water is evaporated. Switch to low flame and add curd. Mix gently from the sides without mashing the vegetables. Coarsely pulse the grated coconut and cumin seeds a few times without adding water. Add this to the cooked vegetables and mix well. Cover and cook for 2 minutes on medium flame. Switch off and add coconut oil and curry leaves. Enjoy the aviyal!
