| Video Discription | Today, we are here with you in our rural home to share the preparation of another traditional dish from Kurdistan, mostly enjoyed during the cold winter days. This Kurdish dish, known locally as "Dowin" and in Iran as "Tarkhineh" is recognized as a type of soup or broth. The method of preparing this delicious dish varies in different regions, but its main ingredients consist of cracked wheat and buttermilk. During the summer season, cracked wheat and yogurt are combined and stored in a container, left to dry under the sun for a few days. In this video, we haven't used the dried combination and instead mixed cracked wheat with buttermilk during the summer, storing it in the freezer.
