| Video Discription | If you stop by T55 Patisserie in downtown Bothell, it's a good bet you'll be greeted by a line of customers. People are willing to wait — often more than an hour — just for the chance to taste the beautiful, scrumptious pastries that come from the kitchen here. "All the pastries are amazing. You can pick anything. You'll never go wrong," one customer said. "Everything is a piece of art and absolutely delicious," said another. "If I don't stand in line an hour before they open, I may not get anything because they sell out before they close. It's just that good." T55 Patisserie is co-owned by Muhammad Fairoz Rashed and Katie Pohl. Partners in both life and business, they're the duo behind the wildly popular SUSU Dessert Bar in Seattle's Chinatown neighborhood. "SUSU Dessert Bar we opened in 2020, and because of COVID, we didn't actually open as a dessert bar. We opened as a weekend bakery pop-up," explained Pohl. "That was going so well we started actively looking for a space to move the bakery, and we found this space in Bothell. It's much bigger. We are an official bakery here." The additional square footage allows Fairoz to flex even more creative muscle. At T55, he turns out an array of pastries using French techniques and flavor profiles along with southeast Asian influences. "For our laminated pastries, we use a French flour, which we import from France," said Fairoz. "I was trained in Paris. Making the laminated stuff using French ingredients will, if you've been to France before, bring back memories. If you've never been before, it's a true taste of France."
