Large Potatoes (boiled, peeled & diced) उबले हुए आलू 1 ½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर Salt to taste, नमक स्वादअनुसार For Garlic Chutney 2 tbsp Degi red chili powder, देगी लाल मिर्च पाउडर 20-22 no. Garlic cloves, लहसुन Salt to taste, नमक स्वादअनुसार ½ inch Ginger (peeled & sliced) अदरक For Lasaniya Batata 3-4 tbsp Oil, तेल 1 tsp Cumin seeds, जीरा 2 no. Cloves, लौंग 2 no. Black cardamom, बड़ी इलायची 1 no. Green cardamom, हरी इलायची 1 no. Bay leaf, तेज पत्ता 2 no. medium Onion, chopped, प्याज Prepared Garlic Chutney, तयार की हुई लहसुन की चटनी 1 ⅓ cup fresh Tomato puree, ताजा टमाटर की प्यूरी 1 tbsp Coriander powder, धनिया पाउडर ⅓ cup Water, पानी Marinated Potatoes, मैरीनेटेड आलू For Raita Boiled Potato, trimmings, उबले हुए आलू ½ Tomato, chopped, टमाटर 2 no. Green chillies (less spicy & chopped) हरी मिर्च ½ small Carrot (peeled & grated) गाजर ½ tbsp fresh Coriander leaves, chopped, धनिया पत्ता 2 cups Curd, beaten, दही Salt to taste, नमक स्वादअनुसार ½ tsp Sugar, चीनी For Garnish Degi red chili powder, देगी लाल मिर्च पाउडर Coriander sprig, धनिया पत्ता Process For Potato Marination In a bowl or tray, add potatoes, degi red chili powder, salt to taste and mix it well. Keep it aside to marinate for a while. For Garlic Chutney In a mortar pestle, add degi red chili powder, garlic, salt to taste, ginger and grind it coarsely. Keep it aside for further use. For Lasaniya Batata In a handi or kadai, add oil, once its hot, add cumin seeds, cloves, black cardamom, green cardamom, bay leaf and let it splutter well. Add onions and saute it for a minute until translucent. Add prepared garlic chutney and cook it for 5-6 minutes on medium flames. Add fresh tomato puree, coriander powder and cook it for a while until it thickens. Add water and give it a quick boil. Add marinated potatoes and cook for 2-3 minutes on low flames. Transfer it to a serving dish and garnish it with coriander sprig. Serve hot with roti or thepla. For Raita In a bowl, add boiled potato trimmings, tomato, green chillies, carrot, fresh coriander leaves, curd, salt to taste, sugar and mix it well. Transfer it to a serving bowl, garnish it with degi red chili powder and coriander sprig.
