It uses chestnut flour in the dough (not a nut) and hazelnuts in the sauce. For the pasta (I've halved the quantities) 325g 00 flour, 125g chestnut flour, pinch of salt, 2 eggs, tablespoon of olive oil, about 100ml water. For the sauce: extra virgin olive oil, 1 onion, 100g hazelnuts, crushed, a sprig of summer savoury or thyme or marjoram, 400ml passata, salt. |
