While processing the juice, a brown coloured ‘impure’ form of sugar is produced which is also called ‘Khand’ or ‘raw sugar’. This sugar contains the natural fibre content of sugarcane which are also referred to as impurities. • The raw khand sugar is combined with water and a small quantity of milk, and boiled for several hours repeatedly to form a thick consistency. The milk is added to make it’s colour brighter. • It is then poured into containers and covered for unto 8 days to minimise its exposure to air and light. • After 8 days, thick yellow greyish crystals are formed which are known as Mishri. • There is no chemical treatment used on Mishri to make it look ‘pretty’, which is the reason why it stays healthy. Ayurveda has more to say about it in terms of its goodness. धागा मिश्री धागा मिश्री या रॉक शुगर देशी खाण्ड से तैयार किया गया है जिसे गन्ने के पौधे से निकाला जाता है। रस को संसाधित करते समय, एक भूरे रंग की चीनी का 'अशुद्ध' रूप उत्पन्न होता है जिसे 'खांड' या 'कच्ची चीनी' भी कहा जाता है। इस चीनी में गन्ने की प्राकृतिक फाइबर सामग्री होती है जिसे अशुद्धियाँ भी कहा जाता है। • कच्ची खांड को पानी और थोड़ी मात्रा में दूध के साथ मिलाकर गाढ़ापन बनाने के लिए कई घंटों तक उबाला जाता है। दूध का रंग हल्का करने के लिए इसमें दूध मिलाया जाता है। • इसके बाद इसे कंटेनरों में डाला जाता है और हवा और प्रकाश के संपर्क को कम करने के लिए इसे 8 दिनों तक ढक दिया जाता है। • 8 दिनों के बाद, गाढ़े पीले भूरे रंग के क्रिस्टल बनते हैं जिन्हें मिश्री के नाम से जाना जाता है। अपने प्राकृतिक गुण के कारण प्रोसेसिंग के दौरान मिश्री का रंग हमेशा बदलता रहता है। • मिश्री को 'सुंदर' दिखाने के लिए उसमें कोई रासायनिक उपचार नहीं किया गया है, यही वजह है कि वह स्वस्थ रहती है। आयुर्वेद में मिश्री के औषधीय गुण से जुड़ी बहुत सी बाते बताई गयी हैं। #8434381221 #Mishri #Alkaline |
