INGREDIENTS:
For the Jerk Shrimp
¼ red bell pepper
3 jalapeños, stem removed
4 green onions
3 scotch bonnets, stems removed
6 garlic cloves
2 inches ginger
¼ whole nutmeg, grated
1 teaspoon allspice
1 cup soy sauce
½ cup ketchup
½ cup veg oil
½ bunch cilantro
2 tablespoons brown sugar
6 Thyme sprigs
3 pounds shrimp, peeled and deveined
Pineapple, cored and cut into large pieces
For the Slaw
¼ small green cabbage, thinly sliced
½ white onion, sliced
½ head Iceberg lettuce, chopped
½ bunch cilantro, chopped
For Assembly
Mayonnaise
Tomatoes, sliced
½ English cucumber, thinly sliced
COOKING METHOD:
1. Add red bell pepper, jalapeno, green onions, scotch bonnets, garlic cloves, ginger, nutmeg, allspice, soy sauce, ketchup, vegetable oil, cilantro, brown sugar, and thyme to a high-powered blender and blend until fully pureed.
2. Add half of the marinade to a large mixing bowl, then add shrimp and toss. Allow to marinate for 1 hour.
3. To the remaining marinade in the blender, add the pineapple and 2 jalapeños and blend. Set aside.
4. Preheat the oven to the high broil setting. Add shrimp and marinade to a baking sheet, and broil until the shrimp are lightly blackened, about 5 minutes.
5. In a large mixing bowl, add all of the slaw ingredients and gently toss to combine.
6. Slice bread, add the pineapple sauce, slaw, tomatoes, cucumber, shrimp and mayo and top with other bun. |
