El nombre se debe a los trozos de bizcocho esparcidos por la superficie, que en forma recuerdan a las sencillas y elegantes flores de mimosa. Gracias a la conexión de la flor con el Día Internacional de la Mujer , el pastel también se suele utilizar para celebrar la ocasión. La receta fue creada por Adelmo Renzi, un chef originario de San Filippo di Contigliano, propietario de un restaurante en el centro de la ciudad de Rieti, en Lacio. El postre saltó a la fama en mayo de 1962, cuando el chef participó en un concurso de pastelería en San Remo, especializado en pasteles, durante el cual presentó la mimosa con la intención de rendir homenaje a la "ciudad de las flores" y resultó ganador. Sin embargo, la receta original utilizada por Renzi nunca ha sido revelada. La tarta se compone de bizcocho muy esponjoso y teñido de amarillo, almibarado y en algunas ocasiones se utiliza licor dulce como Grand Marnier, y un relleno de crema diplomática o crema Madame; crema pastelera y nata montada. Lo más representativo de esta elaboración es su decoración exterior llevada a cabo con cuadraditos de bizcocho dispuestos por la superficie que nos recuerda a la apariencia de la flor de mimosa. En mi caso me he tomado la libertad de variar ligeramente la decoración superior, espero que os guste y, sobre todo, os animéis a recrearla en vuestras casas.
