Matki / Moth bean sprouts - 2 cups 2. Turmeric powder - 1 teaspoon 3. Salt - 1 and half teaspoons 4. Garlic cloves - 5 5. Chopped onion - 1 cup 6. Diced tomatoes - 1 cup 7. Ginger pieces (small) - 3 8. Dry coconut pieces - 1/4th cup 9. Chopped coriander leaves - 1/4th cup 10. Red chilli powder - 1 teaspoon 11. Coriander powder - Half teaspoon 12. Goda masala / Garam masala powder - 1 teaspoon 13. Jeera - 1 teaspoon 14. Mustard seeds - 1 teaspoon 15. Curry leaves - 1 sprig 16. Oil - 2 tablespoons 17. Farsan (Mixture) - 1 cup 18. Pav - 8 nos. 19. Lemon - 1 (cut into 4 quarters) 20. Finely chopped onion - 1/4th cup * Method of preparation: 1. Into a broad vessel, add 2 cups matki sprouts, 1 teaspoon turmeric powder, half teaspoon salt, 1 glass water and pressure cook (3 whistles). Once done, turn off the heat and allow the cooker to de-pressurize. 2. For the masala paste, take a thick bottomed wok/pan, add 1 tablespoon oil and turn on the heat to medium flame. Then, add 5 garlic cloves, 3 small ginger pieces, 1 cup chopped onion and fry until it becomes translucent. 3. Next, add 1/4th cup dry coconut pieces, 1 cup diced tomatoes and continue frying for a minute or so, before turning off the heat. Now, allow it to cool down and grind to make a thick paste. Keep this aside for later. 4. Into a broad wok/pan, add 1 tablespoon oil and turn on the heat to low-medium flame. Then, add 1 teaspoon each mustards seeds, jeera, a sprig of curry leaves, fry until the seeds start to splutter and turn aromatic. 5. Next, add the previously ground masala paste and continue frying for a minute or so. 6. Add the pressure cooked Matki sprouts with the water, and mix well. Then, add half teaspoon coriander powder, 1 teaspoon Goda masala, 1 teaspoon red chilli powder, 1 teaspoon salt (can vary as per taste and quantity) and continue cooking on medium flame until the gravy thickens. 7. Freshly prepared Misal topped with loads of Farsan, garnished with chopped coriander leaves, finely chopped onion and lemon is a perfect side-dish with soft, fluffy pav. 8.
