| Video Discription | Dalma Recipe Indulge in the Soulful Harmony of Odia Cuisine with Dalma. It is a delightful combination of mixed lentils and fresh vegetables, tempered with authentic spices and perfectly paired with steamed white rice. Prep Time - 15 minutes Cook Time - 45 minutes Total Time- 60 minutes Serves - 3 - 4 person Ingredients required: For Dalma Masala: Dry red chilli -3 Cinnamon stick-2 Cloves - 4 Cardamom -1 Cumin seeds - 2 tbsp Fennel seeds -1tsp Dalma preparation: Yellow lentils (harada ladi)-100g Moong dal(muga dali)100g Chana dal(buta dali)-100g Vegetables: Pumpkin - 150gms Yam 150 gms Arbi - 150 gms Carrot - 1 Potato - 2(medium size) Cauliflower - 100gms Raw banana - 1 Brinjal - 2 Tomato -1 Crushed ginger & green chilli (2"ginger+4green chilli) Grated coconut -1bowl Turmeric powder-1tsp Salt to taste Water- 2 litres Bay leaf-2 For Tempering: Ghee-1tbsp Pancha phutana-1tbs (mix of fennel, cumin, mustard, fenugreek &kalonji seeds) Asafetida(hing) - 2 pinch Dry red chilli- 5 pcs Coriander leaves How to make Dalma: 1. Take all 3 dals in a bowl and soak for 10 mins in water. 2. In a pot and add the soaked dals. 3. Add 2 litres of water and 1 tbsp turmeric powder. 4. Boil it for 10 mins on medium flame. 5. Add vegetables except for brinjal, arbi, yam and banana. 6. Add bay leaf and salt. Cover the pot and cook for 10 mins on medium flame. 7. Add the remaining vegetables, grated coconut, and ginger green chilli paste. 8. Take a pan. Heat cumin seeds, fennel seeds, dry red chilli, cardamom, cloves and black pepper. Grind it to make a dry powder. 9. Add the dry powder to the gravy. 10. Take a tadka pan. Add 1 tbsp ghee, Pancha phutana, asafoetida, and dry red chilli. 11. Fry well and add the tadka to the gravy. 12. Mix everything well. Garnish with coriander leaves and serve.
