Virtual as it may be, I'm truly grateful to the ones who've walked along with me :') This video shows 3 easy recipes to use the Goan Recheado Masala (the lovely red paste) to create 3 delicious vegetarian dishes! The vegetables used here (okra, eggplants, bitter gourds) are just examples and you can experiment with a vegetable of choice. In the last recipe, I have made a Paneer-Recheado Paste stuffing for the bitter gourds; instead of/along with paneer you can also use fresh corn kernels, soya granules, potato,... basically the masala paste can be used in any way you like to suit your veg/non-veg cravings! The red Recheado (Portuguese for 'stuffed') paste is, generally, a stuffing masala which balances the flavours of many spices with just the right amount of sourness, sweetness and saltiness. Ingredients: For the Recheado Paste 1 medium-sized roasted Onion 6 Dried Kashmiri Chilies 6 Dried Bedki Chilies 1 teaspoon Cumin seeds 1/4 teaspoon Turmeric powder 20 Peppercorns 6-8 Garlic cloves 1" piece of Ginger Tamarind (small lemon-size) soaked in warm water 4-5 Tablespoons of White Vinegar 1 heaped teaspoon Salt 2 heaped teaspoons Sugar Grind to a thick, coarse paste. This can be refrigerated in an air-tight container and stored for weeks to months! For the Stuffed Lady' Fingers/Okra (Bhindi): Okra (as many as needed) Salt to taste The Recheado Paste Oil, to fry For the Stuffed Brinjal/Eggplant/Aubergine (Bengan): Small Eggplants (I used 8; use as required) Salt The Recheado Paste Oil, to fry For the Stuffed Bitter Gourd (Karela): 5 Bitter gourds, washed and roughly peeled. Make a slit lengthwise on one side and dig out the seeds. Apply salt on the surface and within the created pocket; set aside for 20 minutes. Then, rinse them and dry well. Make the Paneer-Recheado Masala stuffing with- 1 Onion, finely chopped 150 grams Paneer (cottage cheese), cut into small 1 cm cubes 3-4 Tablespoons Recheado Paste Salt to taste Oil, as needed Music Credits: Wander by @tellyourstorymusicbyikson Early Hours by @tellyourstorymusicbyikson |
