Today I'm back sharing 3 EASY + QUICK DINNER RECIPES for busy parents! During this busy season, I’m always looking to create healthy KID APPROVED DINNERS and I know many of us are looking for easy crowd-pleasing meals to serve our families! Here are a few favorite meals around this house, and I hope you’ll enjoy these HEALTHY KIDS FRIENDLY MEALS AS WELL! Recipes are listed below. 🌸 Yam and Chickpea Stew 🌸
Ingredients
- 2 large yams, cut into small chunks
- 4 tbsp tomato purée
- 3 tbsp apple cider vinegar
- 4 cloves garlic, chopped
- 4 tsp turmeric
- 4 tsp cumin
- 1-2 tsp cayenne pepper (adjust according to taste)
- 1 can full-fat coconut milk
- 2 cans chopped tomatoes
- 2 medium eggplants, chopped into bite-size pieces
- 1.5 cups or 1 can chickpeas, drained
- 1 cup spinach
- 1/4 cup cilantro, finely chopped
- 2 cups brown rice, cooked, to serve
Assemble
- Steam the sweet potato for 15 minutes.
- Meanwhile, put the tomato purée, vinegar, garlic, spices, and seasoning in a large saucepan with some olive oil, and heat for a minute or two until they’re bubbling.
- Add the coconut milk, tomatoes, eggplant, and yams. Allow to come to the boil, then simmer for about 45 minutes.
- Add the drained chickpeas and spinach and cook for another 10 minutes.
When ready to eat, sprinkle with cilantro and serve with brown rice.
🌸 Meatball Potato Kale Soup 🌸
Ingredients:
- 2 stalks of Celery, diced
- ½ Large Yellow Onion, diced
- 1 Red Bell Pepper, diced
- 3–5 cloves Garlic, minced
- 1 tsp Dried Rosemary
- ½ tsp Dried Thyme
- 2 Medium or 1 large Potato, peeled and diced
- 1 Can White Beans
- 2 Boxes of Vegetable Broth
- 4 Cups Curly Kale, roughly chopped
- 1 Package of Pre-Made Meatballs
- 1 Tbsp Garlic
- 1 Tbsp Kelp Flakes
- 1 Tbsp Herbamare
- 1 Tbsp Celtic Salt
- Salt and Black Pepper, to taste
Assemble:
- First, add the Onion, Celery, and Bell Pepper to a large nonstick pot with a splash of water or oil. Sauté over medium heat for around 5 minutes, until the onion is translucent. Add in the Garlic, Rosemary, and Thyme, then sauté for an additional 1-2 minutes.
- Add Potato to the pot with 1/3 cup of water, then cover the pot and let steam for 5 minutes.
- Uncover, give everything a good stir. Add in the Beans and Vegetable Broth, stir well, and bring the mixture to a boil over high heat. Once boiling, reduce the heat to medium-low and let simmer for 10 minutes.
- Add frozen Meatballs, cook for 10 minutes. If not in a hurry, thaw meatballs and brown on a pan in avocado oil first.
- Add the chopped kale to the pot, stir again, and cook for an additional 2-5 minutes. Serve warm.
