| Video Discription | Cacio e Pepe is a delightful Roman pasta dish that celebrates simplicity. Only 4 ingredients and about 20 minutes of your time to get cheesy noodle heaven! Dinner couldn’t get any easier! -------------------------------------- Ingredients: High-Quality Spaghetti, Freshly Ground Black Pepper, Pecorino Romano cheese, Butter(unsalted), Fresh Parsley. Method: 1. Boil the water: In a large pot, bring water to a boil. Add salt and the spaghetti. Cook the pasta for about two minutes less than the package instructions recommend. 2. Prepare the pepper: While the pasta cooks, grind the black peppercorns until you have the desired amount of pepper. 3. Create the sauce: Heat freshly ground pepper in a large skillet on high for about 30 seconds or until fragrant. Add about half a cup of hot pasta water (the starchy water helps prevent clumping). Stir constantly for about 30-45 seconds until the pepper is almost melted, leaving some water behind. 4. Add the cheese: In a small bowl, combine freshly grated Pecorino Romano and a little Parmesan. Add about half a cup (or more if needed) of hot pasta water to create a creamy sauce. 5. Toss and serve: Drain the cooked spaghetti and add it to the skillet with the pepper sauce. Toss well to coat the pasta. Serve immediately, sprinkling extra Pecorino Romano and black pepper on top.
