Aşağıdan açıklamamızı okuyabilir, sorularınızı şeflerimizden Vedat Demir'e iletebilirsiniz. Kuzu kafesi, zeytinyağı, maldon tuz ve karabiber ile marine edilir. Kızgın tava ve harlı ateşte tüm yüzeyine mühürleme işlemi uygulanır. Orta ateşte, bir kaşık yardımı ile tereyağını ete yavaş yavaş yedirerek, ön pişirme işlemi yapılır. (Glaze edilir) Gastronom küvete füme aroması vereceğimiz (videodaki gibi taze kekik olabilir) taze ürün üzerine, ön pişirmesi yapılan proteinli ürün (et,balık ya da tavuk) yerleştirilir. Gastronom küvet, alüminyum folyo ile bir kenarı açık olacak şekilde kapatılır. Açık olan bölümden füme aroması vereceğimiz taze ürün pürmüz yardımı ile aroması ete geçecek zamana kadar yakılır. Küvet içerisindeki fümelenmiş aroma çıkmadan, açık olan bölüm de kapatılır. Et, düşük sıcaklıkta( 70/ 75 derece) ortalama 20 dakika dinlendirilir. İhtiyaca uygun gramaj ya da porsiyonlarda kesilerek, tekrar maldon tuzu dökülerek servis edilir. * Back to hot meals! Marinate the rack of lamb with olive oil, maldon salt and black pepper. Seal all sides in a hot pan and at ardent fire. After than, in medium fire,precook the meat by adding butter slowly.( Glazing) Place the fresh herb that will be used for smoking, in a gastronom and on top it, put the precooked protein-food (meat, fish or chicken). Cover the gastronom with aluminium foil and leave one side open. From the open side, burn the fresh herbs until meat absorbs the aroma. Make sure you keep the smoke in, close the remaining side. Rest the meat in low heat (70/75 degrees) for 20 minutes. Slice it in portions and add some more Maldon salt. Ready to serve!
