TIKHA GHUGHRA CHEF AANAL KOTAK PREP TIME: 10-15 mins (excluding soaking time of dry green peas) COOKING TIME: 20-25 mins INGREDIENTS: FOR BOILING GREEN PEAS: • 1 cup dry green peas • Water as required FOR STUFFING: • 3-4 boiled potaotes • ½ cup boiled green peas • 1 tbsp green chilli paste • ½ tbsp ginger paste • Salt as per taste • 1 tbsp red chilli powder • 1 tbsp coriander powder • 1 tbsp cumin powder • 1 tbsp garam masala • 1 tbsp amchur powder FOR DOUGH: • 2 cup maida • 1 tbsp ghee • Salt as per taste • Water as required FOR ASSEMBLING: • Imli chutney • Green chutney • Onion (chopped) • Sev • Pomegranate. METHOD: FOR BOILING GREEN PEAS: • Wash dry green peas properly, then cover it and soak it for 4-5 hours. • Strain the water and add the soaked green peas into a pressure cooker add water 1 cm above the green peans. Pressure cook up to 2-3 whistles. • Keep the boiled green peas aside for further use. FOR STUFFING: • In a bowl add boiled and mashed potatoes, green peas, green chilli paste, ginger paste, salt as per taste, red chilli powder, coriander powder, cumin powder, cumin powder, garam masala, amchur. Mix this well and keep the stuffing aside. FOR DOUGH: • In a bowl take maida, salt as per taste, butter. Then mix butter and maida nicely together. Further rub it between your palms. Then add water gradually and incorporate water into dough nicely untill the dough comes together nicely. • Knead a stiff dough and rest the dough for 10 minutes. • Transfer The dough to the platform and knead it with your knuckles for 1-2 minutes. • Further, cover the dough and rest it for 1 hour. FOR ASSEMBLING: • Take a small portion of dough, make a roundel, then roll into a thin chapati, cut it with help of a round cutter, fill 2-3 tsp of stuffing in it. Apply water on the edges and seal it properly. • Now to give the shape start folding from the corner. • Further, fry the ghughra till crispy and golden brown. • Now take ghughra in a plate, make a hole in between, pour imli chutney, green chutney, onion, sev, pomegranate. • Serve it.
