| Video Discription | 🌱 30 DAYS OF VEGAN 🌱 Easy Vegan Mushroom Pie 🍄 🥧 Serves 2-4 depending on appetites! Prep: 5-10 minutes Cook: 1 hour+ Olive oil 500g mixed mushrooms (opt for darker mushrooms like chestnut, oyster or shiitake), roughly chopped Sea salt & black pepper A couple sprigs of fresh rosemary and thyme, roughly chopped 2 onions, finely chopped 1 clove of garlic, grated Pinch of sugar 200ml red wine 200ml veg or vegan beef stock (I used oxo meat free beef stock cubes) Splash of mushroom ketchup (if you don’t have this use soy sauce) 200g frozen peas Zest of a lemon Pinch of chilli flakes (optional) 1 tbsp of cornflour, mixed with a little water I packet of ready rolled vegan puff pastry Non-dairy milk, for glazing 1. Pre-heat the oven to 200C. 2. Add the mushrooms to a large frying pan with a drizzle of oil. Season generously, stir occasionally and allow to sauté until softened and reduced (about 10-15 minutes). 2. Next, add in the herbs, onions, garlic and a pinch of sugar, and gently cook for a further 15, until softened and caramelised slightly. 3. Pour in the wine, and cook for a couple more minutes until the wine has reduced by half. Then add the stock, mushroom ketchup/soy sauce, peas, lemon zest and chilli flakes. Stir through the slaked cornflour to thicken the sauce if needed. If too thick add a little water. Check the seasoning and adjust if necessary. 4. Pour into a baking/pie dish. Wet around the edges of the dish, roll out the puff pastry and place over the top. Press all around the edges and trim. Crimp the edges if you like, use your fingers or a fork. Score a line in the middle to let out steam. Brush non-dairy milk over the top. 5. Bake in the oven for 30 mins until perfectly golden.
