Welcome to Sip Tequila 101. I'm Carolyn, if you're new to Tequila or you're not sure where to start, you've come to the right place. We're going to talk a little bit about each of the tequila categories and where you might feel comfortable based on what else you like to drink.
We’ll explore each of the Tequilas as you can drink them neat or if you want to put them in a cocktail.
Quick tip, before we get started: the very first thing that you want to do when you're selecting a premium tequila is make sure that it has the 100% agave label on it. That's the only way that you're going to know that you're drinking the most pure tequila that's available on those shelves.
Blanco Tequilas are often referred to as “chef Tequilas” because they're so full of flavors and expressions. Volans Blanco or Ocho Plata are both perfect examples of this - so many flavors with a soft approach and lots to get into.
Blanco tequilas are the unaged expression of tequila. It's clear, and you may also hear it called crystal or silver. This is a Tequila that comes right out of the still, and you might be more pulled to this category if you drink gin or vodka or other clear spirits.
When it comes to making a Blanco cocktail, keep it simple and go the route of a perfect margarita.
Reposados or rested Tequilas are rested in barrels anywhere from two months, right up to one year. They have this funny reputation of being everyone's first favorite Tequila. A well-made Reposado balances the natural flavors of the agave and the flavors that come from the barrels.
G4 is an expression that shows all of these traits. It's floral and soft with just the right amount of oak. Make a tasty Paloma with a Reposado with just two ounces of Tequila, juice of one lime, top with grapefruit soda and salt.
Añejos are Tequilas that are rested anywhere from one year, all the way up to three years, and if you're a brown spirits aficionado, this is where you should start. Similar to a fine wine or whiskey, they have a wide range of flavors. They can be spicy, sweet, or oaky, and tend to be at a little bit of a higher price point. Cocktails here get really fun. Switch out your favorite brown spirit, and you can change an old fashioned or put a spin on the classic Manhattan and call it Mexico City.
Extra Añejo Tequilas are aged three years or longer. So whether you're an old world wine lover or a cognac connoisseur, there's an extra añejo out there with your name on it. We're starting to see some really interesting crossovers in this category, particularly from the wine industry. Compoveda, for example, spends five years in red wine barrels and when you're tasting it, you can get a lot of those red fruit notes you might find in a full bodied, California Cabernet or syrah.
Instead of putting an Extra Añejo into a cocktail, pair it with a little bit of dark chocolate or hard cheese.
