Parsi Brown Rice Recipe: Basmati Rice - 2 Cups Ghee - 2 tbsp Cardamom - 4 nos Cloves - 5 nos Cinnamon - 1-inch piece Star Anise - 1 no Bay Leaves - 3 nos Onion (sliced) - 1 Cup Sugar - 1 tbsp Water - 4 Cups Salt - 1 ½ tsp Cooking Instructions: 1. Wash the basmati rice and soak it for 20 minutes. 2. Heat ghee in a pot and add the whole spices. Cook it until they turn fragrant. 3. Add the onions and saute them continuously until they start to brown. 4. Add the sugar and allow it to caramelize, stirring occasionally. 5. Add the water and bring it to a boil. 6. Strain and add the soaked rice. Boil on high flame until the level of rice almost reaches the level of the water. 7. Cover with aluminum foil or with a tight-fitting lid. Cook on a low flame for 14 minutes. 8. Once cooked, stir it gently from the sides. Serve with any dish of your choice.
