Put the liquid in a bowl & add sieved Gram Flour in it gradually & mix it well. Cover it & keep it for 5-7 mins. In a pan, put some Water for boiling & keep a ring in it & cover it. Put Baking Soda & Eno Fruit Salt in batter & mix it with hands. Put the Dhokla Batter in greased tin. Keep the tin in pan. Cover it & give it steam on high flame for 15 mins & then turn the flame slow for 10 mins. Keep the ready Dhokla for cooling down then cut it in pieces. For Tadka, put Oil, Mustard Seeds, long chopped Green Chilies & Curry Leaves.Then put Water & Sugar & when Sugar gets melted, turn off the flame & put the Tadka on the Dhokla. Garnish the Spongy Dhokla with Coriander Leaves & enjoy it. For Dhokla Premix, take a bowl, put sieved Gram Flour, Semolina, Salt, Powdered Sugar, Citric Acid, Eno Fruit Salt & mix them all. Dhokla Premix will get ready easily at home.
