| Video Discription | #백종원 #국수 #한식 소고기로 국물 내서 진하고 맛있는 칼국수입니다 해 보시면, 식당 차리고 싶어지실 거예요 매주 월 오후 8:30 글로벌한 한식 이야기가 펼쳐지는 KBS '백종원 클라쓰'에 많은 관심 부탁드립니다!😁 ====================================== [ 소고기칼국수 ] [재료] 칼국수면(150g) 소고기(불고기용) 약 2/3컵(70g) 감자 약 1/4개(40g) 양파 약 1/6개(40g) 표고버섯 1/2개(10g) 애호박 1/8개(40g) 대파 1/5대(20g) 청양고추 1개(10g) 참기름 2큰술(14g) 물 약 3과 1/2컵(650ml) 간 마늘 1/2큰술(10g) 국간장 1큰술(10g) 멸치액젓 1큰술(8g) 후춧가루 약간 [ 만드는 법 ] 1. 양파, 감자는 두께 0.5cm로 채 썰어 준비한다. 2. 표고버섯은 두께 0.3cm로 편 썰어 준비한다. 3. 애호박은 두께 0.5cm로 채 썰고, 대파, 청양고추는 두께 0.3cm로 송송 썰어 준비한다. 4. 소고기는 두께 1cm로 굵게 채 썰어 준비한다. 5. 깊은 프라이팬이나 냄비에 참기름, 소고기를 넣고 잘 풀어가며 강 불에 볶는다. * 간 소고기가 있다면 대체하여 사용해도 좋다. 6. 고기가 완전히 익으면 물, 감자, 양파, 표고버섯을 넣고 끓인다. * 얼큰한 육수를 원한다면 굵은 고춧가루를 추가한다. 7. 육수가 끓어오르면 칼국수 면을 체에 밭쳐 흐르는 물에 헹군 후 육수에 넣어 저어가며 끓인다. * 칼국수 면을 미리 헹궈두면 뭉칠 수 있으니 육수에 넣기 직전에 헹군다. 8. 국간장, 간 마늘, 멸치액젓을 넣고 중 불로 줄여 약 4분 30초 끓인다. * 불 세기나 냄비의 크기에 따라 물양을 조절한다. * 기호에 따라 MSG를 추가한다. 9. 면이 기호에 맞게 익으면 애호박, 청양고추, 대파를 넣고 다시 한번 끓어오르면 불을 끈다. 10. 완성 그릇에 옮겨 담은 후 후춧가루를 뿌려 완성한다. [ Beef kalguksu ] 150g kalguksu noodles about 2/3 cups (70g) beef (for bulgogi) about 1/4 (40g) potato about 1/6 (40g) onion 1/2 (10g) shiitake 1/8 (40g) summer squash 1/5 (20g) green onion 1 (10g) Cheongyang pepper 2 tbsp (14g) sesame oil about 3 1/2 cups (650ml) water 1/2 tbsp (10g) minced garlic 1 tbsp (10g) soup soy sauce 1 tbsp (8g) fermented anchovy sauce some ground pepper [ Directions ] 1. Finely chop the onion and potato into pieces 0.5cm thick. 2. Chop the shiitake into slices 0.3cm thick. 3. Chop the summer squash into pieces 0.5cm thick, and the green onion and Cheongyang pepper into pieces 9.3cm thick. 4. Chop the beef into pieces 1cm thick. 5. In a deep frying pan, add the sesame oil and beef. Stir thoroughly as you stir-fry it over high heat. *If you have minced beef, you can use that instead. 6. Once the meat is completely cooked, add the water, potato, onion, and shiitake and bring to a boil. *If you want a spicy broth, you can add some coarse red pepper powder. 7. Once the broth comes to a boil, using a strainer, rinse the kalguksu noodles under running water before adding into the broth. Stir as it boils. *If you rinse the kalguksu noodles beforehand, the noodles may clump up, so rinse the noodles right before putting them into the broth. 8. Add soup soy sauce, minced garlic, and fermented anchovy sauce. Reduce to low heat and continue boiling for about 4 minutes and 30 seconds. *Adjust the amount of water according to the strength of the fire or the size of the pot. *Add MSG to your liking. 9. Once the noodles reach your desired texture, add the summer squash, Cheongyang pepper, and green onion. Once the broth comes to a boil, turn off the heat. 10.
