[ 재료 ] [ 치킨반죽 ] 토막닭(7호) 1마리 우유 1컵(190g) 튀김가루(반죽물용) 1컵(120g) 튀김가루 1컵(120g) 맛소금 1/2큰술(5g) 후추 1/3큰술(1g) 식용유 1.8L [ 양념치킨소스 ] 물엿 4/5컵(220g) 케찹 1/3컵(75g) 고추장 1/4컵(45g) 진간장 3.5큰술(35g) 간마늘 1/2컵(65g) 고운고춧가루 3큰술(15g) 황설탕 1/3컵(50g) [ 만드는 법 ] 1. 토막닭은 깨끗하게 세척하여 물기를 빼서 준비한다. 2. 준비 된 닭에 맛소금, 후추를 넣고 주물러 밑간한다. 3. 우유를 넣어 닭이 잠기게 한 후 20분정도 재운다. 4. 양념치킨소스 재료를 냄비에 넣고 저어가며 농도나게 끓인다. 5. 20분이 지나면 닭에 튀김가루 1컵을 넣고 섞어준다. 5. 일회용봉투에 튀김가루를 넣고 반죽 된 닭을 넣어 골고루 섞어준다. 6. 큰 코팅냄비에 식용유를 넣어 160~170도 예열한다. 7. 예열 된 기름에 닭을 넣어 2차튀김한 후 기름을 빼준다. 8. 기호에 맞게 양념소스를 버무린다. * 튀김가루는 닭의 크기에 따라 추가하여 사용한다. [ 양념치킨소스 만드는 법 ] 1. 큰 냄비에 물엿, 케찹, 고추장, 진간장, 간마늘, 고춧가루, 황설탕을 넣어 잘 풀어준다. 2. 중불로 불을키고 바닥을 저어준다. 3. 한번 끓어 오르면 불을 끄고 완성한다. [ Ingredients ] [ Chicken batter ] Cut chicken (No. 7) 1 Milk 1 cup (190g) Frying powder (for batter) 1 cup (120g) Frying powder 1 cup (120g) Flavoring salt 1/2 tbsp (5g) Pepper 1/3 tbsp (1g) Cooking oil 1.8L [ Seasoned fried chicken sauce ] Starch syrup 4/5 cup (220g) Ketchup 1/3 cup (75g) Red pepper paste 1/4 cup (45g) Dark soy sauce 3.5 tbsp (35g) Minced garlic 1/2 cup (65g) Fine red pepper powder 3 tbsp (15g) Brown sugar 1/3 cup (50g) [ Directions ] 1. Rinse the cut chicken thoroughly and drain out water. 2. Preseason the chicken meat with flavoring salt and pepper. 3. Soak the preseasoned chicken in milk for 20 minutes. 4. Add all the ingredients for the sauce in a pan and cook until thickened. Keep stirring. 5. After 20 minutes, add 1 cup of frying powder to chicken. 5. Put frying powder to a plastic bag and add the battered chicken and mix. 6. Add cooking oil to a large coated pan and preheat to 160-170 degrees. 7. Once the oil is heated, add the battered chicken and deep-fry twice. Drain the oil. 8. Mix with the sauce. * Adjust the amount of frying powder according to the size of chicken. [ Directions for the sauce] 1. Add starch syrup, ketchup, red pepper paste, dark soy sauce, minced garlic, red pepper powder, and brown sugar to a large pan and mix well. 2.
