Add water and wash them well. Drain water and keep it aside. In a wide bottomed pan, heat 1 tablespoon oil. Add the washed bombil and 2 tablespoons white sesame seeds. Stir fry for 5-7 minutes on medium flame. Cool down completely. Add to a blender jar and grind to a fine powder. Keep it aside. In a wide bottomed pan, add 2 tablespoons oil. Add the garlic and curry leaves and sauté on medium flame till they turn golden brown and crisp. Add the ground bombil along with 1 tablespoon sesame seeds and salt. Stir fry on medium flame for 8-10 minutes. Dry bombay duck/bombil chutney is ready. Cool down completely. Store in an airtight jar. Can be stored in the fridge for up to 1 year. To serve, heat 1 tablespoon desi ghee. Add 2-3 tablespoons of the chutney and stir fry on low flame till golden brown and crisp. Serve with rice bhaakri or wheat rotis. Enjoy! विधि: बॉम्बिल को छोटे-छोटे टुकड़ों में तोड़ लें | पानी डालकर इन्हें अच्छे से धो लें | पानी निकाल कर एक तरफ रख दें। एक चौड़े तले वाले पैन में 1 बड़ा चम्मच तेल गरम करें। धुली हुई बॉम्बिल और 2 बड़े चम्मच सफेद तिल डालें। मध्यम आंच पर 5-7 मिनट तक चलाते हुए भूनें | पूरी तरह ठंडा कर लें | एक ब्लेंडर जार में डालें और बारीक पीस लें। इसे एक तरफ रख दें। एक चौड़े तले वाले पैन में 2 बड़े चम्मच तेल डालें। लहसुन और करी पत्ता डालें और मध्यम आंच पर सुनहरा भूरा और कुरकुरा होने तक भूनें। 1 बड़ा चम्मच तिल और नमक के साथ पिसी हुई बोम्बिल मिलाएं। मध्यम आंच पर 8-10 मिनट तक चलाते हुए भूनें | सूखी बॉम्बे डक/बोम्बिल चटनी तैयार है। पूरी तरह से ठंडा कर लीजिए। एक एयरटाइट जार में स्टोर करें। इसे फ्रिज में 1 साल तक स्टोर करके रख सकते हैं | सर्व करने के लिए 1 टेबलस्पून देसी घी गर्म करें | 2-3 बड़े चम्मच चटनी डालें और धीमी आंच पर सुनहरा भूरा और कुरकुरा होने तक भूनें। चावल की भाकरी या गेहूं की रोटी के साथ परोसें। |
