| Video Discription | Serves 1 Prep Time: 10mins Cooking Time: 5mins Ingredients: - 3 extra large eggs - 2 tbsp low fat milk - 1 tbsp olive oil - ½ tomato, diced - handful baby spinach - 4 mushrooms, sliced - Handful of grated parmesan cheese - 40g low fat ham - Chilli flakes (optional) - Salt and pepper to taste Method: 1. Preheat a fan-forced oven to 200 degrees. 2. In a bowl, whisk together eggs, milk, salt, pepper and chilli flakes. 3. Heat fry pan on medium-high heat with oil. Once hot, place in the egg mixture. 4. Place tomato, mushrooms, spinach, cheese and ham on egg mixture. 5. Cook for 1-2 minutes. Remove from heat and place in oven for 3-4 or until egg mixture set. 6. Remove from fry pan and serve with a side salad or crusty slice of bread. Nutrition per serve (1) Energy: 2,351 kJ, Carb: 6.5g, Protein: 41.5g, Fat (total): 39.2g, Sat Fat: 10g, Iron: 5.12mg |
