Strawberry Nice Cream:
1 frozen banana, 1 cup frozen strawberries, 1 tbsp chia seeds, a splash of plant milk to blend, optional vegan protein powder
Chickpea mash
1 can rinsed chickpeas
2 ripe avocados
3 tbsp vegan mayo
1 tsp garlic powder
1/2 red onion, chopped
salt and pepper
2 tsp dried dill
1/2 lemon’s juice
Chickpea crepes: 1cup all purpose flour, 1 cup chickpea flour, 1 cup sparkling water, 1 cup plant milk, 1 pinch of salt, 1 tsp cinnamon, 1 tbsp corn flour
Chia seed pudding: 3tbsp chia seeds, 1/2 cup plant milk, 1 tsp cinnamon, 1 tsp maca powder (hormonal balance)
Vegan mac n cheese
1 head of broccoli
400g macaroni pasta
(save 1/2 cup pasta water)
Cook the pasta in salty boiling water for 5 min, then add the broccoli for another 5 & then drain
Sauce:
100g raw cashews
400ml canned full fat coconut milk
1/2 cup pasta water (add more water if too thick)
1/4 cup nutritional yeast
2 tsp garlic powder
2 tsp curry powder
2 tsp turmeric powder
salt+pepper to taste
Blend all of them in a blender until smooth
Assembly:
saute a large minced onion (or 2 small), along with 3-4 cloves minced garlic. Add the sauce, simmer for 2 min on medium heat, add the pasta & broccoli
