| Video Discription | Give this Kolkata-style puchka a try and we bet you won't be able to resist having just one! Ingredients required: Puffed puris meant for pani puri as required For Bhaja Moshla: Cumin seeds - 2 tbsps Fennel seeds (saunf) - 2 tbsps Coriander seeds - 2 tsp Green cardamoms - 4-5 Small potatoes, boiled and peeled - 5 Salt to taste Bhaja moshla - 1 tsp Chaat masala - 1½ tsps Coriander powder - 1 tsp Crushed green chillies - 2-3 Boiled dried white peas 2 tbsps soaked brown chickpeas (kala chana) Chopped fresh coriander leaves - 2 tbsps Tamarind - 50 grams soaked in 1½ cups water for 2-3 hours Lemon juice - 2½ tbsps Black salt to taste How to make Kolkata Style Puchka: 1. Dry roast cumin seeds, fennel seeds, coriander seeds, and green cardamoms in a pan till they turn fragrant. Switch the heat off and allow it to cool. 2. Transfer the roasted mixture to a blender jar and blend to a fine powder. 3. To make the stuffing, take boiled potatoes on a large plate. Mash it with the help of your hand. 4. Add salt, 1 tsp prepared spice mix, chaat masala, coriander powder, green chillies, boiled dried white peas, soaked brown chickpeas, and coriander leaves, and mix till well combined. 5. Squeeze the tamarind to extract the pulp. Strain the mixture into a bowl. Add lemon juice, black salt, and salt. 6. Add 2 tsp of the prepared spice mix and mix till well combined. Stir in 4 cups water. 7. Transfer 2-3 tbsps of this mixture into the prepared stuffing and mash till well combined. 8. Arrange the puris in a large bowl.
