Today, we're bringing our very own unique dish, inspired by our Kenyan roots, a Mogo (Cassava) and Sweetcorn snack. This dish is a quick and flavourful teatime snack that pairs perfectly with masala chai, samosas, or any of your favourite accompaniments. We start by boiling the mogo and then adding it to a tomato and coconut-based sauce, giving it an extra crunch with sweetcorn. The coconut milk, while optional, adds a creamy richness and helps to diffuse the spices. This easy-to-make recipe is ready in 30 minutes, serves six, and can be easily scaled up or down according to your needs. Feel free to adjust the spices to suit your taste. 🥗 Ingredients To serve 6 you will need: 500g of mogo (cassava) 1 litre of boiling hot water ½ teaspoon of salt (for the mogo) ½ teaspoon of red chilli powder (for the mogo) 2-3 tablespoons of cooking oil 300g of tinned chopped tomatoes 550g of tinned or frozen sweetcorn 300ml of coconut milk Juice of 1 lemon ½ teaspoon of turmeric (for the mogo) ½ teaspoon of cumin seeds ½ teaspoon of mustard seeds ½ teaspoon of salt (for the sauce) ½ teaspoon of red chilli powder (for the sauce) 1 teaspoon of garam masala 4-5 curry leaves A handful or two of fresh coriander Let's whip up this mouth-watering snack together!
