In reality, sweetbreads are actually a type of offal made from the internal organs from either lambs or calves. While people do of course eat animal testicles, testicles are most often sold as “fries” or “stones”, or mountain oysters. So if you see mountain osyters on a menu, now you know you know what you’re actually ordering and it has nothing to do with oysters let me tell you.
